Cleaning Supplies Required
This machine is hand-cleaned. A pre-cleaning circulation step is performed but does not replace manual disassembly and hand-washing of all components.
All O-rings and gaskets must be removed every cleaning cycle, no exceptions. These components cannot be adequately cleaned or inspected while installed.
Set machine to OFF. Place all disassembled components into a clean bus bucket for transport to the three-compartment sink. Remove the following components in order:
The hopper cannot be transported to the sink. After removing components, clean the hopper in-place as follows: (1) Wipe the inner walls of the hopper with a sanitizer solution using bar towels. (2) Scrub the inside of the freezing cylinder with the largest brush from the brush kit. (3) Wipe the inside of the freezing cylinder with a sanitizer solution. This step is performed in addition to the three-compartment sink cleaning of all removable components.
Transport all disassembled components to the three-compartment sink using a clean service cart. Prepare the sink before beginning:
Lubrication is required at every cleaning cycle. Apply food-grade lubricant (NSF H1 rated) before reassembly. Dry or inadequately lubricated O-rings cause premature wear and can crack, creating pathways for contamination.
This step sanitizes the internal machine pathways (hopper and freezing cylinder) that cannot be submerged in the sink. It is performed after full reassembly.

Standard cleaning interval: every 3 days. If product testing, inspection results, or regulatory guidance requires a more frequent schedule, the operator shall comply accordingly. Product may only be added to the soft serve machine within 12 hours of the machine completing a sanitization cycle.
In the event of any temperature fault, mechanical failure, or extended offline period, a full clean and sanitization cycle must be completed and the product restocked before returning to service.
The following checklist must be completed and signed at the conclusion of each cleaning event. The logbook is kept inside the kiosk at all times and must be presented to health inspectors upon request. Records must be retained for at least one full calendar year.
99 SPOONS — CLEANING & FOOD SAFETY CHECKLIST
Cleaning records are retained on-site inside the kiosk logbook for a minimum of one full calendar year or as otherwise required by the local health authority (Section 7.6 of the 99 Spoons Operator's Manual). The logbook must be presented to health inspectors upon request.
Authorized health department personnel may obtain product samples directly from any kiosk at any time.
99 Spoons issues dedicated inspection access codes to authorized personnel, enabling direct product dispensing from the machine for sampling or laboratory testing. If additional access assistance is needed, the responsible operator will provide support to regulatory personnel upon request.
Storage of food ingredients and consumables is managed by the kiosk operator in coordination with the host location.
Host locations designate areas for dry or liquid mix, toppings, sauces, cups, and disposable service items.
Operators apply First-In-First-Out inventory protocols to maintain product freshness and ensure traceability at all times.
Food ingredients are stored separately from cleaning chemicals and all non-food materials in accordance with food safety standards.
